For your great steak enjoyment for dinner, your personal saddle of beef (approx. 20kg) is matured using a centuries-old maturing method at low temperatures, high humidity and gentle air circulation. Only after a stay of 6-8 weeks in the dry-aging climate cells and daily quality controls can the meat develop in the way our guests appreciate it.
